Can you substitute hominy for the corn? I love hominy.

We made it in the crockpot, and I brought chips, shredded cheese and sour cream also. It's thick - more like a chili. We like to put it with tortilla chips and turn it into a nacho dish...

Mine is a little different. It's the same basic recipe but here's what I do:

1 lb lean hamburger
1 can dark kidney beans
1 can lite kidney beans
1 can pinto beans
1 can cream corn
1 packet original Hidden Valley Ranch
1 packet taco seasoning
1 can rotel
1 can tomato sauce

I don't drain any of the beans or corn before I put them in there. Just throw it all in the pot. Yes, it is a weight watchers recipe - it's been a family favorite for years from back when I was doing WW. We make huge batches of it if we're having a lot of people around or if Steve takes it to work for the guys, etc... I think my biggest was 5 of everything once. That's the beauty of this recipe, want a double batch, just do two of everything since it's all in 1's....

Early out, yes you will want to watch that carb count. At my stage of the game I am eating more complex carbs. Changes that I might make to this recipe is to use the extra lean hamburger. I also would drain and rinse the kidney beans, pinto beans. That will rinse off some of the added salt. Also you can buy low sodium options.

In regards to the corn? If you want a different substitute Hominy may be your best bet. Here are the stats for 1/2 cup which you more than likely won't eat. Total carbs are 13 but you can subtract the dietary fiber which means it is only 10 carbs.

I bought all the stuff this weekend and will be making it this week...it looks pretty simple...brown the ground beef...and dump cans into the crock pot! yummy!

Oh good! So we had tamales and salad with salsa dressing for supper tonight, if I make this in the crockpot tonight, it should be perfect for Wednesday supper! I'm thinking a pinch of cheddar and crushed tortilla chips on top would be perfection...not for newly post ops, of course
