Flax Meal Pizza Crust
Flax Meal Pizza Crust
Preheat oven 425 degrees
1 1/2 c. Flaxseed Meal
2 tsp. Baking Powder
1 tsp. Salt
1tsp. Dried Italian Herb Blend
1Tbsp. Splenda
3 Tbsp. Olive Oil
3 Eggs, beaten
1/2 c. Water
Mix all together. Set aside for a few minutes...it needs to thicken up.
Spread onto Silicone lined baking sheet. Bake for 20 minutes. Remove from oven
and top with favorite toppings. Bake for another 10-15 minutes.
***or cut crust into strips for "bread sticks".
***add garlic and parmesean cheese to the crust for different flavor.
***omit the dried herbs and add cinnamon and nutmeg for a "dessert pizza". Top with Sugar Free Pudding and fruit.

Sherry - or anyone - I know this is an older post, but....
Is this ok for someone 6 weeks out? I just bought a big bag of the flaxmeal for making the parmesan tuna patties and need some more recipes!!

I never made this NikkiJo, so I'm not sure what the texture is like. If it's in any way "bready", I'd definitely skip it for now.
On the other hand, the parmesan tuna patties should be awesome for you right now. They're really soft, and yummy too! Just be careful with how much oil you use to cook them. Better yet, just use a squirt of Pam spray.
By the way...keep that flax meal in the fridge. It goes rancid quickly otherwise.

lol...well, make it!! just kidding! I will try a half batch one day to see what it is all about.
I made the tuna patties once and forgot the parmesan cheese and used bread crumbs instead of flaxmeal since i hadn't gotten it yet. They still turned out decent. I think you can fiddle with that recipe quite a bit and they turn out good no matter what! Now I have all the right stuff, so I will try them again.
I haven't opened the flaxseed meal yet - should I still have it in the fridge or just after I open it? I guess I could stick it in there now anyway!!

Let us know how it turns out. I keep meaning to make this, but I generally just use a piece of Flat Out bread to make my pizza on. (Too doughy for you sweetie!)
Yep, go ahead and refrigerate the flax seed meal...it'll last longer.

I have a feeling it might be too doughy/bready for me. How about the one minute muffin? Will that work or should I wait on that as well? I am good about not eating any regular breads/tortillas/etc but this making your own stuff is a different story!
