White bean and ham soup
2 (15oz) cans cannellini beans (white kidney beans) drained, rinsed and divided
1 can beef broth
2 tsp olive oil
1 med onion chopped
2 tsp ground cumin
1/4 tsp pepper
8 oz ham diced (i use turkey ham for this)
6 c chopped red swiss chard
In a blender or food processor puree 1 can of beans and broth until almot smooth
heat oil in a large sauce pan over med heat until hot, add onion, cook 3 min until tender. add cumin, pepper. cook and stir 1 min.
add bean/broth mixture, beans, and ham. bring to a boil. cover and simmer 10 min until heated through.
stir in chard cook 1 min until wilted.

It's a type of greens, Sherry. You should be able to find it fresh, in the produce section. It's a green leaf with bright red stems.

I've never seen Swiss Chard out here - what could I sub it with - I've never eaten it so have no idea for a good alternative.

Chinese cabbage or Boy Choy maybe? Those are usually pretty common.
I used to have an awesome recipe for sloppy joes that used ground turkey, V-8, chopped mushrooms, and Bok Choy. Unfortunately I lost it, because it was really, really good. I need to try to recreate it someday.

Corrine, I found a list of things to substitute for Swiss Chard:
Substitutions: beet greens OR spinach OR turnip greens OR bok choy OR escarole OR mustard greens

beans and ham how camn you go wrong with that, and if you get the smoked turkey it taste just like ham, but better for you. I know I will be trying this soon. My husband loves beans so I know he will love it to.

Well I made this soup tonight. It was really easy and VERY tasty!! Family liked it too. I'll certainly be making this one again.
