Default Rosemary Chicken with White Beans (crock pot)

I just ran across this recipe on another WLS forum. This looks SO good. I need to buy some Rosemary so I can try this out.


Rosemary Chicken With White Beans

2 Tbsp oil
4-6 boneless, skinless chicken breasts (or bone-in breasts,skinless of course!)
1 c carrots, sliced
1/2 c celery, sliced
1 can great northern beans, drained and rinsed
1/2 tsp salt
1/2 tsp pepper
1 tsp rosemary
1/3 cup fat free italian dressing

Heat oil and brown chicken on both sides. Place carrots, celery, and beans in bottom of crock pot. Add chicken breasts. In small bowl, mix together salt, pepper, rosemary, and dressing. Pour mixture over chicken and veggies. Cook on low for 8 hrs. or high for 4 hrs. Enjoy!!

Let me know how it is Judy. I bought all of the ingredients to make it, but haven't done so yet. I'm always up for a good, EASY, crockpot recipe.

I'm thinking about skipping the browning part. I don't need the extra calories/fat from the oil. Plus, I never brown chicken before I put it in the crockpot anyway.
