Default ok heres a great ricotta recipe its also a diabetic recipe

hey thought i would share this it also a diabetic recipe.

500g low fat ricotta
1 bag fresh baby spinach leaves
1 large egg or 2 small ( i just like a little extra egg in this dish)
1 bag of pine nuts
1 big squeeze of mixed chives or fresh what ever you like
and garlic to taste i love garlic so i use about 2 teaspoons or 2 cloves

place pine nuts and spinach leaves with garlic into a large pan and cook untill spinach wilts and garlic and pine nuts are soft while waiting place ricotta into a large bowl with egg and chives then put spinach mix into bowl and combine,

get your muffin tray and lightly spray with olive oil cooking spray and dish mixture into tray and bake untill golden on a low heat! and serve with maybe a tomato and red onion salad drzzle a small amount of oil and some basil.

no need to add salt the ricotta has enough for the dish!

yeah the protein is great and its nice for when you have friends over so you can all eat the same foods!
