I'm making a cheesecake on a regular basis. The whole thing has approx. 1300 kcal, 140g of protein, 45g of carbs and 57g of fat (mostly mono- or polyunsaturated). So here it goes:
1kg of ground white cheese (approx. 3g of fat per 100g)
6 eggs (you can use more if you want)
vanilla extract with ground seeds
1 cup of Splenda granular
baking powder
soda
pinch of salt
Directions:
1. Mix 6 egg yolks, white cheese, vanilla extract, Splenda and one teaspoon of baking powder together in a food processor
2. Beat 6 egg whites with a pinch of salt and a pinch of soda until if forms solid peaks (or however you call it

)
3. "Fold" white eggs with the cheese mix, so it's as fluffy as possible
4. Smear some butter all over a baking tin (about 24 cm in diameter) and sprinkle it with bread crumbs
5. Pour the cheese-egg whites mixture into the baking tin and bake for approx. 50 mins at 180-200 degreed Celsius
Once I added dried cranberries - it was delicious, but added a lot of carbs. Yesterday I added some lemon extract - yummy

The cheesecake is not very high (it actually collapses a lot when it cools down), but it's very moist.
