Default Chicken Fingers

3 cups corn flakes (I used my Special K Protein Plus cereal)
1/2 tsp poultry seasoning
1/4 tsp black pepper
1/4 c fat free egg substitute
1/4 c skim milk
1 pound boneless skinless chicken breasts (I used b/s chicken thighs and it worked great, too)
Nonstick cooking spray

Place cereal in blender/food processor/magic bullet and process into crumbs (you should get about 3/4 c of crumbs. Adjust the amount if necessary.)
Combine crumbs, seasoning, and pepper in a shallow dish. Stir to mix well.
Combine egg substitute and milk in a shallow dish. Stir to mix well.
Cut each chicken breast into 5 long strips. Dip each strip first in the egg mix, then in the crumb mix, turning to coat each side with crumbs.
Coat a large baking sheet with nonstick spray, and arrange the strips in a single layer on the sheet. Spray the tops of the strips lightly with cooking spray, and bake at 400 for 15 minutes, or until the strips are golden brown and no longer pink inside.
