Cranberry Chicken (EZ Slow Cooker)
I recently checked out a book from the library, "3-Ingredient Slow Cooker Recipes", by author Suzanne Bonet.
I haven't made this one yet, but it sounds good, and even better, easy!
1 1/2 lbs boneless, skinless chicken breasts halves
1 (16 oz) can whole-berry or jellied cranberry sauce
1 cup French dressing (I'd personally use LF or FF)
Put the chicken breast halves in the slow cooker. In a medium size bowl, combine the cranberry sauce and French dressing, then pour the mixture over the chicken. Cover and cook on low for 5 to 7 hours, or until the chicken is thoroughly cooked.
6 servings.
485 calories, 18g fat, 44g protein, 36g carb, 0.8g fiber
Optional: add a 2 oz envelope onion soup mix to the sauce and dressing mixture for a more complex flavor.

i made a recipe like this one but you used apricot preserves instead of cranberry sauce, and let me tell you it was outta sight. So good. I may just give this one a try. Thanks sherry.

I thought it sounded crazy too, but mine turned out good. Kind of a sweet and tangy glaze on the chicken.

wonder what other fruit we could use - not sure how apricots or the cranberry would go over in my house

Just don't tell them what's it, lol. I had this recipe once with pork chops, and it was very good....kind of reminded me of a Chinese-type sauce.

You may need to BUY that cookbook! Actually, I photocopy out what I want, then take the book back to the library.
I tried the one with Red beans and rice package mix, chicken broth and the cut-up chicken breasts. It was DELICIOUS!!! I only ate about 3 bites because of the rice. But hubby and my folks ate the rest right away.

Lol, that's actually what I was planning to do Rose...sit down at my scanner, and copy the pages I want. I need to go through and flag the ones I want, but it might just be easier to cough up the $12 to buy it at Amazon.
I'm glad you liked the one with the red beans. I actually haven't tried any of them yet, since I need to make a trip to the grocery store first.
