Default Pork and Black Bean Stew (EZ Slow Cooker)

I recently checked out a book from the library, "3-Ingredient Slow Cooker Comfort Foods", by authors Robert and Carol Hildebrand.

I haven't made this one yet, but it sounds good, and even better, easy!

2 lbs lean pork, such as loin
2 (14 oz) cans black beans
1 (16 oz) jar salsa
Salt and pepper to taste

Trim the fat from the pork. cut the pork into 1 inch cubes and put them into the slow cooker. Drain the beans and add them to the pork. Add the salsa and stir. Cook for 2 to 3 hours on high or 5 to 6 hours on low. Adjust the seasoning with salt and pepper to taste.

6 to 8 servings.
196 calories, 5g fat, 20g protein, 17g carb, 6g fiber, 36mg cholesterol, 580mg sodium

Sherry,

Any recipes without beans... kids and husband will not eat them but I have copied a couple of the recipes down- will try one tomorrow night- dinner for tonight is already planned

Hi Sue. Lol, we like beans so I tend to gravitate toward those recipes. I did post a few chicken recipes that I don't think had beans. I'm loving this cookbook so far, even though I haven't actually cooked anything yet. It's checked out from the library, but I might just go ahead and buy a copy. There's so many in here that are easy, and gastric bypass friendly (or easily modified to be friendly).
