Chicken with Red Beans and Rice (EZ Slow Cooker)
I recently checked out a book from the library, "3-Ingredient Slow Cooker Comfort Foods", by authors Robert and Carol Hildebrand.
I haven't made this one yet, but it sounds good, and even better, easy!
2 lbs boneless, skinless chicken breasts
1 (12 oz) package red beans and rice mix
4 cups chicken broth (I'd personally use low-sodium)
Cut the chicken breasts into 1-2 inch pieces and put into the slow cooker. Add the rice and beans and the flavoring package. Add the broth and stir. Cook on high for 3 hours or on low for 5 to 6 hours. The dish is finished when the rice and beans are tender and the broth is fully absorbed.
4 servings.
603 calories, 8g fat, 68g protein, 60g carb, 11g fiber, 138mg cholesterol, 898mg sodium (less if you use low sodium broth)
