Chicken in Salsa Verde (EZ Slow Cooker)
I recently checked out a book from the library, "3-Ingredient Slow Cooker Comfort Foods", by authors Robert and Carol Hildebrand.
I haven't made this one yet, but it sounds good, and even better, easy!
3 lbs boneless, skinless chicken breasts
2 (10 oz) cans salsa verde
1 bunch fresh cilantro, divided
Cut the chicken into 1-2 inch pieces and put into the slow cooker. Add the salsa verde. Cook for 2 hours on high or 4 to 5 hours on low. Rinse the cilantro and remove the leaves, discarding the stems. Chop coarsely. Add half the cilantro to the slow cooker and stir in. Cook for another hour and serve with the remaining fresh cilantro sprinkled over each serving.
4 to 6 servings.
