Lentil and Tomato Soup (EZ Slow Cooker)
I recently checked out a book from the library, "3-Ingredient Slow Cooker Comfort Foods", by authors Robert and Carol Hildebrand.
I haven't made this one yet, but it sounds good, and even better, easy!
1 1/2 quarts chicken broth
2 cups dried lentils
1 (14 oz) can diced tomatoes with onion and celery
Salt and pepper to taste
Optional: 1 cup chopped carrots
Wash the lentils in a colander and pick them over for any small pebbles. Add all of the ingredients to the slow cooker. Cook for 6 to 8 hours on low, until the lentils are soft. Adjust the seasoning with salt and pepper to taste.
6 to 8 servings.
188 calories, 1g fat, 15g protein, 30g carbohydrate, 15g fiber, 0mg cholesterol, 1689mg sodium (use low sodium chicken broth to decrease that!)
