Chicken and Artichoke Casserole (EZ Slow Cooker)
I recently checked out a book from the library, "3-Ingredient Slow Cooker Comfort Foods", by authors Robert and Carol Hildebrand.
I haven't made this one yet, but it sounds good, and even better, easy!
2 lbs boneless, skinless chicken breasts
1 (14 oz) can artichoke hearts, drained
1 (12 oz) can condensed cream of mushroom soup (I'd personally use the reduced fat variety)
Cut the chicken breasts into 2 inch pieces and put them into the slow cooker. Cut the artichoke hearts in half and add them to the chicken. Add the cream of mushroom soup. Cook for 2 hours on high or 4 to 5 hours on low. Stir and serve.
4 (really big) servings.
363 calories, 9g fat, 55g protein, 14g carb, 6g fiber, 139mg cholesterol, 574mg sodium
Update on nutritional info:
The nutritional info above is what was given in the cookbook this came from. However, I just ran it through the SparkRecipes recipe builder, and came up with lower figures. This is probably because I used the artichoke hearts that are packed in brine (not oil). The rest of the stuff is the same, including the full fat soup (I didn't have any of the low fat kind.) Anyway...here are the new stats using the different type of artichoke hearts:
265 calories
5.5 g fat
110 mg cholesterol
1,162 mg sodium
8.1 g carbs
2 g fiber
48.2 g protein

I bought a slow cooker almost 3 years ago and NEVER used it!  This one sounds delish! I may have to start using it! lol

OMG, I love my slow cooker. So much that I have 2 of them, lol (different sizes). I love coming home to a cooked meal.

You're welcome Beth.  I'm loving this 3 ingredient cookbook that I borrowed from the library. I started copying down recipes from it, but it's getting overwhelming because I like so many of them. I think I'll just have to break down, and buy the book for myself.
