Creamy Black Bean and Tomato Soup (EZ Slow Cooker)
I recently checked out a book from the library, "3-Ingredient Slow Cooker Comfort Foods", by authors Robert and Carol Hildebrand.
I haven't made this one yet, but it sounds good, and even better, easy!
2 (14 oz) cans diced tomatoes with lime juice, cilantro, and jalapenos)
1 (16 oz) can black beans
1 (8 oz) can evaporated milk
Salt and pepper to taste
Put all the ingredients plus 2 coups water into the slow cooker. Stir. Cook for 6 to 8 hours on low. Adjust the seasoning with salt and pepper to taste.
6 to 8 servings.
101 calories, 3g fat, 6g protein, 14g carbohydrate, 3g fiber, 8mg cholesterol, 602mg sodium
