Default Caesar Tortellini Salad

1 (9 ounce) package cheese tortellini (cooked and rinsed under cold water)
1 head romaine lettuce (torn into small pieces)
1 cup prepared creamy caesar salad dressing
1/4 cup grated parmesan cheese (or to taste)
10 large cherry tomatoes (cut in half)
2 cups caesar-flavor croutons
black pepper (to taste)
salt (optional and to taste)
In a medium bowl combine the cooked tortellini with chopped lettuce, Caesar dressing and Parmesan cheese; toss well to coat.
Season with black pepper to taste and salt if desired.
Top with sliced cherry tomatoes and croutons.
Serve immediately.

This sounds like a fabulous recipe.... for people who have not had gastric bypass. The pasta and croutons and full fat creamy salad dressing are way too carby and fatty for gastric bypass folks. Maybe skip the croutons, go for a lower in fat dressing, and less of it, (not fat free, that stuff is slimy!) and find a sub for the pasta. Maybe diced chicken? or beef? Something to up the protein in this dish would be great. I do love caesar salad dressing (reduced fat) for dipping grilled chicken strips into.
I have had good luck roasting fresh cauliflower and using it as a sub for potatoes, rice, and other carby stuff in certain recipes. It's not appropriate for every recipe, but great in some.
I see you are so very close to goal, keeping my fingers crossed for you to reach it by your one year anniv! Good luck!
