Default Lemonade Pie

Lemonade Pie


1 package (.3 oz) sugar-free lemon jello
1 package (8 oz) reduced fat cream cheese, softened
1 3/4 tsp Crystal Light lemonade mix
1 reduced fat graham cracker crust (8")
6 TBSP reduced-fat Cool Whip

Prepare gelatin according to package directions. Refrigerate until almost set (around 3 hrs?) Transfer to a blender or food processor, add the cream cheese and lemonade mix. Cover and process until smooth. Pour into crust - Refrigerate overnight.

Serve with Cool Whip.

Yield 6 servings
Nutritional info: 1/6 of pie with 1 TBSP cool whip

243 cal; 11 g fat; 26 g carb; 0 fiber; 6 g protein
Diet exchanges: 2 fat; 1 fat-free milk; 1 fruit

wonder if I could prepare the jello using less milk so it sets up faster and cut out that refigerate step?

I usually make pudding as a pie filling using much less milk - think it would work?

I haven't made this yet, but it calls for Jello gelatin, not Jello pudding. So, it's made with water, not milk.

To cut out a little more of the sugar...Cool Whip makes a sf cool whip now and its not to bad. I'm going to try this. I wish i could find a sugar free grahm cracker. Also i don't think the fat free cream cheese is that bad. Thanks Sherry, this may be my desert for Christmas.

Kroger has a sugar free graham cracker crust in the their diet and diabetic section. I think 50/Fifty is the brand, I used one for Thanksgiving and it was really good.
