Festive Black Bean Chili
2 c. chopped onions
2 garlic cloves, minced
1/2 c. water
1 T. ground cumin
1 T. ground coriander
1 c. prepared mexican style salsa
2 red and/or green peppers, chopped
3 c. cooked black beans (2 - 15 oz. cans, rinsed & drained)
3 c. canned whole tomatoes, with juice (28 oz. can)
2 c. fresh or frozen corn kernals (11 oz. package)
salt to taste
tabasco or other hot pepper sauce to taste
1/4 c. chopped fresh cilantro, or to taste (optional)
In a covered pot, cook the onions and garlic in water on high heat, stirring frequently, for about 5 min. Add cumin and coriander and stir on high heat 1 minute. Stir in salsa and peppers, lower heat,cover,simmer for 5 minutes,stirring occasionally. Add black beans and tomatoes; simmer for 10 minutes. Add corn and cook 10 minutes. Add salt and tabasco to taste. Stir in cilantro if desired.
4-6 servings (11 oz. servings)
