Default Scrambled Eggs To Go

Scrambled Eggs to Go

1 dozen eggs (or equivalent amount of Egg Beaters)
1 lb. turkey sausage
8 oz. shredded low fat cheddar cheese

Brown and crumble sausage. Let cool, and add eggs and cheese... mix well. Pour into 18 greased muffin tins. Bake at 350° for 30 minutes, or until golden brown.

These are quick & easy, keep well in the fridge, and reheat wonderfully in the microwave.

This sounds great. I hate breakfast because I never have time to make it. I can do this though. Thanks

I'm anxious to try these too. I usually eat a couple of ounces of LF cheese for breakfast, but I'm getting pretty sick of that. These will be easy to take to work, I think.

baking in the muffin tin is brilliant! I'm going to try this for the upcoming week - I am getting sick of protein drinks
