Default Southwest chicken corn cakes

SOUTHWEST CHICKEN CORN CAKES

1/3 c. Mexican-style corn, drained
1 (4.5 oz) can chopped green chiles, drained
1/2 c. dry breadcrumbs (makes 8 cakes, so not alot per serving!)
1 large egg
4 c. cooked chicken, shredded and chopped
1/3 c. roasted red peppers, drained and chopped
1/4 c. mayonnaise
2 t. salt-free herb seasoning (I used Mrs. Dash original)
2 t. chopped fresh basil (really best with fresh, but could use half as much dried)
2 t. chopped fresh cilantro (could use dried)
1/8 t. salt
1 t. Splenda

Mix all ingredients until well combined. Form and press into 8 patties. Dip each pattie into beaten egg and lightly dust with more breadcrumbs. (Can omit this step if you don't want to use the crumbs, but it's not very much and helps with the browning and crisping. Fry in a tablespoon or so of olive oil and serve with salsa, sour cream, or place in a casserole dish and bake with a little enchilada sauce.

Makes 8 servings...stats include 1 tablespoon olive oil for frying.
Per Serving: 198 Cal; 20 g Protein; 15 g Tot Fat; 7 g Carb; 1 g Fiber; 1 g Sugar; 123 mg Sodium

These sound yummy Beth. I'll have to look at the store for Mexican style corn...never noticed that before.

But I'm curious...why can't you use dried cilantro? (It's hard to find the fresh stuff where I live.)

I think that may have been a typo in the recipe, Sherry. I would think dried would be fine but you would have to decrease the amount by half.
