Smile Rosti Cottage Pie

Hi all,

I had friends over for dinner last night and i made this for the first time! It was yummy and served me plus 4 regular people servings if served with green veg.

Rosti Cottage Pie

Ingredients

For the filling

500g pack extra lean minced beef
1 onion, finely chopped
2 cloves garlic, finely chopped
250g pack button mushrooms, wiped and sliced
400g can chopped tomatoes
1 tablespoon tomato puree
1 teaspoon Dijon mustard
1 tablespoon fresh thyme, finely chopped
˝ teaspoon salt

For the topping

1kg large potatoes peeled and par boiled for 6 minutes. Drain and leave to get cold.
225g carrots
25g butter
1 tablespoon olive oil
freshly ground black pepper

Method

Dry pan fry the minced beef until brown.

Add the onion and cook slowly for 3 minutes then add the garlic and cook for another 1 minute.

Drain off all excess fat, before adding the mushrooms, tomatoes, puree, mustard, thyme and salt.

Cook gently for 7 minutes. Pour into a 20cm x 15cm dish.

For the topping, grate the potato and carrot together on the coarse side of the grater.

Heat the butter in a large frying pan and pile in the grated potato and carrot and cook for 10 minutes.

Lift the rosti style potato and carrot carefully on to the top of the pie, drizzle with olive oil and bake in the oven 190°C, 375°F, gas mark 5 for 20 minutes.

Serve with broccoli or other green veg.

This sounds yummy! I'll have to "translate" it to American reasures, but it sounds worth it.

Shouldn't be too difficult to translate. 30g equals 1 ounce, so 500g is about a pound. A lot of the cans I buy have the weight in both systems. And my measuring cups have both measures. I always find it amusing when I watch a British cooking show and they give the American measures in subtitles.
