Default Chicken Stew

1/4 c oil
1 c chopped onions
1 (14oz)can diced tomatoes
2 c chicken broth
1 tsp minced garlic
1 tsp thyme
1 bay leaf
1 tsp salt
1/2 tsp pepper
4 c diced potatoes
1 1/2 c sliced carrots
2 c chopped chicken breasts (lg cubes)

Heat oil in large pot, saute onions for 2 min.
Add next 7 ingredients.
Bring to a boil.
Add potatoes, carrots, and chicken.
Simmer til vegetables are done, about 30 minutes.
Thicken with cornstarch if you like a thicker stew.

your recipe post need to come with a warning that you will crave whatever it is and your mouth may start to water and drool is possible !!! where do you find all these yummy recipes? could you post protein /fat/ carb info too? well as long as I am asking for stuff......just cook me up a large sample and send it !!! thank you...

I made this last night at it was very good. My pouch was pleased and I can't say that often. I doubled the recipes so that I could take some to work for lunch. I will definitely make this again.

Hey Kim when you made this did you use real or canned potatoes? Just trying to make it a bit easier and quicker. It was good huh?

I used real but cut them in large sections and didn't peel them just washed them.
