Cottage Cheese Salad
1 cup fat free cottage cheese
1/4 cucumber, seeded and diced
1/8 cup carrot, grated
2 T. red bell pepper, diced
1 clove garlic, minced
Combine all ingredients in small bowl. Stir and let stand for 10 mins to blend flavors. Store any remaining salad in sealed container.
Serves 2 80 calories, 15g protein, 5g carbs, 5mg cholesterol, 303 mg sodium
