Default Spicy Turkey Meatballs

Spicy Turkey Meatballs

Prep Time: 20 minutes
Cook Time: 23 minutes

Ingredients:
1 medium onion, finely chopped
1 jalapeno pepper, finely chopped
2/3 cup dry breadcrumbs
2 egg whites
1/3 cup nonfat milk
1/2 cup finely chopped cilantro
3/4 pound lean ground turkey
2 tsp chili powder
2 tsp ground cumin

Preparation:
Preheat oven to 400 degrees.
Combine ingredients in a large mixing bowl with a fork. Form into 1 - 1 1/2-inch balls and place on a large baking sheet lined with parchment or sprayed with nonstick cooking spray.

Bake for 10 minutes, remove from oven and turn meatballs over, and bake for another 10 minutes.

Makes about 30 meatballs (6 generous servings)

Transfer to a large skillet and simmer for 2-3 minutes in about 5 cups of low-fat marinara sauce.

Serve with whole-grain pasta.

Per Serving (with sauce, without pasta): Calories 232, Calories from Fat 68, Total Fat 7.5g (sat 1.4g), Cholesterol 45mg, Sodium 360mg, Carbohydrate 25.5g, Fiber 3.1g, Protein 15.6g

Beth...I just made these for dinner tonight (we wanted something new) and they are WONDERFUL!!! I added garlic to it, and put it in a stroganof sauce, and it is great! Love it! Thank you
