Default New Stuffed Peppers

1 pkg frozen chopped spinach, drained well
1 large onion, chopped
3 Tbs. butter or margarine
3 eggs or eggbeaters
8 oz Feta cheese
1 cup cottage cheese
pepper to taste
4 medium red and yellow peppers-sliced vertically in half
1.2 cup parmasean cheese, grated

Preheat oven to 375 degrees. Sautee onion in butter until tender. Remove from heat.
In a bowl, beat eggs together and then add spinach.
Stir in feta cheese, cottage cheese, sauteed onions and black pepper to taste.
Fill peppers with spinach mixture and place in buttered cassarole dish, sprinkle top od peppers with parmasean cheese. Bake for 30 minutes.

I love stuffed peppers I cant wait til I get to that stage so I can try this one. Thanks!

That sounds SO GOOD!! If only I cooked for more than one.
