Default A must to try: Texas Caviar

A co worker brought this in to the lounge this week and I had to make several trips for a bite. I had to get the recipe, this is so yummy I had to share.


Make the marinade first so that it can cool while you are preparing the rest.

Marinade

  • 1/2 cup veg. oil
  • 1/2 teaspoon pepper
  • 1 cup sugar
  • 3/4 cup vinegar
  • garlic salt to taste
  • Lawry pepper seasoning to taste
Boil long enough for the sugar to melt and then let cool. Mix with the other ingredients, refrigerate and let sit for a day.
Main Ingredients

  • 1 can of pinto beans
  • 1 can of black eyed peas
  • 1 can of black beans
  • 1 can of shoe peg corn
  • 2 cans of sliced black olives
Rinse and drain the above in a colander then place in large bowl.

Chop fine and add to the above:

  • 1 green pepper
  • 1 yellow pepper
  • 1 red pepper
  • 1 orange pepper
  • 1 medium red onion
  • 1 and half cup celery
Before serving drain excess marinade.

Enjoy with Tostitos, Fritos, crackers, or on a salad.


I would get a spoonful at a time it was wonderful.

I have had this many times preop and loved it. I guess you could sub the sugar with splenda to make it post op friendly. Did you have it with chips or crackers or anything or just by the spoonful? I am printing this out to try. I bet it would be good with the Nacho Burgers Beth posted a few days ago.

I tried it alone and the sugar didn't bother me. I didn't know there was sugar in it until I ate it. I then went up at lunch and grabbed a tostito and dipped it in. I only ate the one and was stuffed. I was thinking it would be good on a salad but you are right on a burger it would probably taste wonderful. I am making some after work. I thought it sounded like a good snack to have around the house.

Ooohhh it would be good on a salad maybe with some grilled chicken. I had not even thought of that.
