Armadillo Eggs
12 to 16 Jalapeno Peppers
4 to 6 ounces cream cheese, goat cheese, soft mexican cheese, jack cheese...
1 lb lean ground meat (turkey, chicken or beef)
2 tbls Worchestershire Sauce
1 tsp grill seasoning or lemon pepper
1 egg or some eggbeater, if needed for stickiness
Prepare peppers by cutting off tops and removing seeds and membranes (you may have to slit the sides open). Set aside.
Mix ground meat, Worchestershire sauce, grill seasoning, and egg. Stuff peppers with cheese and wrap about an ounce of meat around the stuffed pepper, covering the entire thing. Freeze individually and then store in zip-loc bags.
To cook, just remove the number needed for meal, allow to thaw in fridge. Grill or broil, 5 minutes per side, or until desired doneness. Serve.
