Cappellini Salad
My wife has been making this cold pasta salad that is just awesome...and it's REALLY easy!
1 box Whole Wheat Cappellini (We use the Ronzoni Healthy Harvest brand)
1 cup of homemade or store bought bruschetta (we buy it at our local store--it's tomatoes and onions in a light Italian dressing with Italian seasonings)
1 package of crumbled Feta cheese (I also like it with Asiago)
3 Tablespoons of Extra Virgin Olive Oil if the Bruschetta needs a little pick up
I also like a little extra garlic in it too...the kind that's chopped fine and refrigerated...
Mix everything together in a large container that you can cover. (it makes a lot, and it lasts awhile) This makes about 8 servings and the nutrition information is very general as I generated it using Fitday.com...

Fat 7g
Carbs 35g (Because of the pasta...remember that some of that is fiber, about 6 grams, and only 1 gram of sugar)
Protein 8g
Even at 8 servings, it's a pretty large portion...if you make 16 servings out of it (having half a serving instead...) the carbs may be a little easier to deal with. Also...the nutrition info includes extra olive oil, if you don't use it, you'll save yourself about 20 calories per serving, and a couple of grams of fat.
