Default Peanut Butter Cheesecake

Peanut Butter Cheesecake



Ingredients
½ cup SF Vanilla wafer crumbs
1 8 oz pkg Light cream cheese
1 8 oz pkg FF cream cheese
½ cup FF sour cream
½ cup Light ricotta cheese
¾ cup PB2
¼ cup FF milk
¼ cup Splenda brown sugar
½ cup Splenda grandular
2 tsp Vanilla extract
¾ cup Egg beaters

Instructions
Preheat the oven to 300 degrees. Add a pan of hot water to the oven to add steam to the oven as the cheesecake bakes. Spray a 9" springform pan or a deep casserole dish, with cooking spray. Pour the cookie crumbs into the pan and shake around to coat the sides and bottom of pan. In a food processor add the cream cheeses, the sour cream, and the ricotta cheese. Process until smooth. Add in the PB2 and the milk and process until it's incorporated into the batter well, scraping down the sides as needed. Mix in the splenda's and the vanilla until blended. Slowly pour the egg beaters in through the tube as the processor is running and process until well blended and smooth. Pour into pan. Bake at 300 for 50 minutes. Turn off the oven and leave the cake in the oven for an additional 30 minutes. It will be soft in the center, but will set up as it cools. Allow cake to come to room temperature. Chill in the fridge for 8 hours or overnight allowing to chill completely

Notes
8 servings= 175 cals and 11g protein
10 servings=140 cals and 8.6g protein
12 servings= 116cals and 7g protein

Hey Beth:

I love this PB2 as a former peanut butter freak and this PB Cheesecake recipe sounds fantastic! Thanks for all you do to really make TT site as great as it is! I feel like a knucklehead as I've been so busy, I have not kept up my end of the bargain as a TT member...I have to share some new pictures. Have lost ten inches in the waist since 4/16 surgery and all's going great.

And I just noticed something I think I saw long ago--you're from Grand Rapids. One of my wife's sisters lives in Rockford, MI, and somewhere on a wall in The Corner Bar there, my name is up in infamy (with tons of other names) for eating 16 chili dogs in 43 minutes. Thank the Lord, THOSE days are over FOREVER!

Anyway, thanks for this great recipe and all the other helpful stuff you share!

Hi there Bill! So good to see you. You are doing awesome, sir!! Yep, sometimes life keeps us busy. We each give what we can to this place and that is fine. Nothing to feel bad about. There really isn't.

Yep, Rockford is just down the road a little ways. I can't say I've ever been to the Corner Bar...but if I ever do, I'll look for that bit of history there. WOW, 16 chili dogs in 43 minutes?? ...not sure if I could have done that but yep, thank God, I'll never have the desire to try....so your record is safe when it comes to me, Bill. *L*

Yes, you probably could but the nutritional stats would be MUCH higher. The PB2 only has 53 cal/2 Tbsp, 1.87 g of fat and 5.65 g of protein. Regular peanut butter give you about 200 cal, 16g fat and 8g protein.

Big Dog, I don't think the PB2 is sold in any stores. The only place you can get it is online. They are a small company and quite new, so I don't think they have a real broad base when it comes to their products.

If you go to the site there is a store locater. It looks like if you are in the midwest there are quite a few stores that sell it. The thing I was wondering about it is it looks like you have to order 4 jars of it at a time and the shelf life is around 6-9 months once open. I may have to go back and read that again but I just thought 4 jars could last me a loooong time.
