Default Muffin in a minute

1/4 Cup Flaxseed Meal

1/2 teaspoon Baking Powder

1/2 teaspoon cinnamon

1 tablespoon Splenda (optional)

1 egg


Mix everything together in a coffee cup. Cook for one minute in the microwave. Turn the cup upside down to take the muffin out. If it looks wet, let it sit for a minute or so. I have these for breakfast. You can add blueberries, or try other additions. Some people add a tablespoon of cream cheese before cooking.

Fiber 8 grams

I can really recommend this recipe although the one I have includes 1tsp of either butter or olive oil (I prefer the olive oil) but that does add another 40 calories and a bit more fat. I think it tastes a little nicer.

Half of one is my limit but I love them hot with sugar free preserves or with some low fat cream cheese.

I've also used some DaVincci sugar free syrup over it (caramel is good - same with the chocolate).

Good for the bowels too and that's without the other benefits of flax seed meal.

Corrine, I tried this tonight. I added in 2 tbsp Torinaro sugar free chocolate and half of a smashed banana. It was really filling but so good! I could eat about 2/3 and I was sufficiently full.

Most certainly something I will be making again.

Thank you for posting this, Beth! One of the leaders of my WLS support group has talked about this recipe (or its very close relative) - she loves these muffins, especially the microwaving in a coffee cup part. Maybe someday I'll try one out myself. Such things are still prohibited by my surgeon at this stage, so it won't be for quite a while (not that I haven't been known to make an occasional foray into post-op "No-No Land" ) - but a tasty Muffin in a Minute with good protein, fiber, flax omegas and other healthy fats definitely sounds intriguing for when I can have one...

I'm wondering how a little SF preserves or mashed other fruits besides 'nanners' would taste. Cream cheese and some raspberries...? Methinks I will try it. I have soy flour--do you think it would work as well as flax meal?

I think just about any fruit would work, Donna. Also the cream cheese with raspberries sounds delicious! I'm not sure about the soy flour. You may need to add in a little oil or butter for that. The flaxmeal has natural oil in it. So maybe like a tsp of butter would do it. Just try it and see how it works.

I played around with this a bit today and discovered some good variations. At least I thought they were good.

Variation #1:
1/4 c flaxseed meal (120 cal/9 fat/6 protein/8 carbs/8 fiber)
1/4 c egg beaters (30 cal/0 fat/6 protein/1 carb)
1/2 tsp cinnamon
1/2 tsp baking soda
2 Tbsp DeVinci sf vanilla syrup
1/4 c raspberries (16 cal/0 fat/0 prot/3.7 carbs/2 fiber)
1 Tbsp almonds (40 cal/3 fat/1 prot/2 carb/1 fiber)

Cooked in the microwave for 1 1/2 minutes. Delicious!!

Variation #2:
1/4 c flaxseed meal (120 cal/9 fat/6 protein/8 carbs/8 fiber)
1/4 c southwestern egg beaters (30 cal/0 fat/6 protein/1 carb)
1/2 tsp baking soda
1/4 c shredded reduced fat cheddar cheese (80 cal/6 fat/7 prot)
dry minced onion to taste
garlic powder to taste

I cooked as above. Let it cool completely. Sliced it in half like a bun and used it for a swiss cheese and ham sandwich. Oh my....this was SO good!

So anyway...let me challenge you all to play around with this and share your creations.

Default "Brownie" Muffin in a minute

I haven't tried this but I found this variation on another site and I thought I would share. It sounds really good.

“Brownie” Muffin in a Minute

1/4 cup flax seed meal
1 egg or 1/4 c egg substitute
1/2 tsp. baking powder
a rounded tablespoon of plain greek yogurt
around a heaping tablespoon of dark chocolate cocoa powder
2 teaspoons Splenda
handful of chopped walnuts
shake of SF mini-chocolate chips

Microwave for 75 seconds and let it stand for a minute

I made a variation of this, this morning. I didn't have the walnuts or chocolate chips but I added in 1Tbsp of PB2 and it was really good. I do think a few walnuts and chocolate chips would make it all the better.
