Default Favorite 4th of July Recipes???

What is everyone having at their 4th of July BBQ?

This is one of my favorites:

Crunchy Romaine Toss

1/2 cup sugar (or splenda)
1/2 cup vegetable oil
1/4 cup cider vinegar
2 tsp. soy sauce
salt and pepper to taste
1 (3oz.) package ramen noodles, broken
2 Tbsp. butter or margarine
1 1/2 cups chopped broccoli
1 small head romaine lettuce, torn
4 green onions, chopped
1/2 cup chopped walnuts (optional)

In a jar with a tight-fitting lid, combine the sugar, oil, vinegar, soy sauce, salt and pepper; shake well (I make the dressing early and save in frig). Discard seasoning packet from noodles or save for another use. In a skillet, saute noodles in butter until golden. In a large bowl, combine noodles, broccoli, romaine and onions. Just before serving, toss with dressing and walnuts.

I don't know the nutritional information, but this is one of Jane and my favorites. (Lots of protein in Salmon too!)

Recipe calls for 2 fillets of Salmon (but we usually use three or four)
1/2 tsp sea salt
1/4 tsp pepper
1 cup canned pineapple chunks (drained)
1 - 11 oz can Mandarin oranges (drained)
1/2 cup thinly sliced celery
1.2 cup slivered almonds
3/4 cup lite or low fat mayonnaise

1. Sprinkle salmon with salt and pepper; bake the salmon and then "flake" it.
2. Combine the salmon, pineapple, Mandarin oranges, celery and almonds.
3. Gently stir in the mayonnaise
4. Refrigerate 2 to 3 hours before serving

Yummy!!!!!

That crunchy romaine salad was yummy....

An going to enjoy it pre-op and dream of it all the way "down" ("out"??) to it on the other side!
