Default Chicken with creamy tomato sauce

This is from my new cookbook, Eating Well after Weight Loss Surgery. I have made it like 5 times in 2 weeks it is soo good. I highly recommend it.

1 pound thin chicken breasts or cutlets
1 pound sliced fresh mushrooms
1 finely chopped onion
1/4 cup white wine (I used white cooking wine from Walmart)
1/2 cup canned diced tomatoes drained
1 5 ounce can evaporated milk
salt and pepper to taste


Spray pan with nonstick cooking spray and cook chicken. Remove chicken from pan to a plate. then and add mushrooms and onion to pan and saute until cooked. Add wine, tomatoes, and evaporated milk. Add back into pan any chicken juices that have accumulated on plate. Cook about 6 to 8 minuted until mixture has thickened up and reduced to about half the original size. Season to taste with salt and pepper. Add chicken back in and heat thoroughly. Serve chicken with sauce on top. Enjoy!!!!!

In the cookbook it has the nutritional value broken down depending on what surgery and what stage post op you are in. This is a great cookbook for wls patients.

Yum, this sounds good.

I've been thinking about buying that same cookbook. But, I'm hesitant for these reasons: I usually only cook "simple" things...things with "normal" ingredients, not fancy, weird stuff that I wouldn't normally buy. Second, I don't like recipes with a lot of prep time. My rule is, "If it takes less time to eat than it did to prepare (not including cooking time), I'm not making it."

This recipe you posted fits my "rules", lol. Based on your experience with the recipe book, will most of the other recipes fit my needs? Thanks for your opinion.

Honestly Sherry so far this is the only recipe I have made out of it. I have just been craving it. This was a piece of cake to cook though. No trouble at all. I have a few other recipes marked to try I will let you know when I give them a whirl. Some do seem a little more complicated then others, I am like you I gravitate to easy.

Thanks Cassie. I look forward to hearing what you think about the rest of the book.

I have this particular cookbook on my "Wish List" right now at Amazon...and another WLS cookbook too, but can't remember the name of that one. I'm usually not a cookbook buyer, and I print recipes I like off the internet. This cookbook however, sounds more promising than most.

BTW, can you post the nutritional info for this recipe please?

My book is at home but I will try to bring it tomorrow and post the nutritional value.
