Beth's 'Banana Split Pie'
Well I've been in the mood to experiment lately so I put together a desert that has been mulling in my head lately. Family raved about it. Not sure what to call it but it was rich and good! I do think I may play with it a bit more but this is the first draft of my 'Banana Split Pie'.  It's pretty rich people and it is NOT low calorie but for that special treat it ain't bad.
Ingredients:
Chocolate graham cracker crust
2 7oz 2% Fage yogurt
1 pkg sf banana cream pudding
1 pkg sf vanilla pudding
1 container lite Cool Whip
1 c ff milk
2 med. size bananas
Sliced strawberries to cover the top
Splenda to taste
2 tsp vanilla extract
Mix together the yogurt, pkg banana cream pudding, 1 tsp vanilla extract, 1/2 container Cool Whip and Splenda to taste. Spoon mixture into pie crust. Slice bananas in a layer over the mixture.
Mix vanilla pudding, milk, 1 tsp vanilla extract. Stir until the pudding has thickened. Fold in 1/2 container Cool Whip. Layer this over the bananas.
Slice the strawberries and arrange on the top of the pie. Sprinkle with Splenda if desired.
Nutritional stats: 1/8th of pie (I ate half of 1 serving and it was plenty!)
280 calories
7.4 grams fat
7.5 grams sugar
7 grams protein
Next time I think I will experiment with putting in some crushed pineapple in the bottom layer and not using as much Cool Whip. I'm also kind of wondering if there is some way of making this crustless which would really cut down on the calories quite a bit.

Well, pre-surgery, I made a cake with cool whip and pinapple icing. Maybe instead of pineapple on the bottom you could make something like this icing. The icing is a tub of cool whip, package of instant vanilla pudding, and a can of crushed pinapple. So you could use this for the top layer using the sugar free/fat free ingredients???

Thanks Rach..sounds like a good idea. That's pretty close to how I made the topping minus the milk and pineapple.

Just so we are clear, there is no milk in the icing, just cool whip, pinapple (whole can juice and all), and pudding. I didn't want you to put the milk and think it was too runny.

Thanks Rach...I kinda figured that I would try the pineapple with juice and omit the milk. Glad you clarified that though.
