Default Cucumber Dill Salad

Really no protein in this recipe but if you are further out and are getting in your protein this sounds like a really good side dish. I haven't tried it yet but I love cucumbers and dill so I'm going to have to give this one a whirl! You could probably substitute out the sugar for Splenda if you are really sugar sensitive but for myself I would probably just use the real thing. It would only be like 1 tsp of sugar per serving if even that.

Cucumber Dill Salad Recipe

This recipe serves: 4
Preparation time: 10 minutes

Ingredients
1 medium cucumber, peeled and cut in half lengthwise
1 shallot, sliced very thin
3 tablespoons cider vinegar
1 tablespoon sugar
salt to taste
freshly ground black pepper
3 tablespoons finely chopped, fresh dill

Cooking Instructions
1. With a melon baller or a sharp knife, scoop out the seeds in the center of the cucumber. Cut the cucumber into thin slices.
2. Place the vinegar, sugar, salt and pepper in a bowl and whisk together until the sugar dissolves.
3. Add the cucumber slices, shallots and dill and stir well.
