Missing panckes? High protein pancakes
So are any of you missing pancakes? I'm not a big pancake eater but I played around with a couple different recipes today and came up with one I thought was quite good. Here it is:
1/2 c reduced fat cottage cheese
1/2 c egg subsititute
1 envelope Kashi Go Lean vanilla/honey oatmeal
1/3 c ff dry milk
1 tsp vanilla extract
Splenda to taste (optional)
Grind the oatmeal in your magic bullet. Remove and set aside. Place the rest of the ingredients in the magic bullet and pulsate. Add back the oatmeal and pulsate again. Heat a nonstick griddle on med/low and spray with non-stick cooking spray. Then just make your pancakes as usual.
Makes 4 med/large pancakes

10 protein

beth i swear you need to have a GBS cooking show! i used to eat pancakes almost daily for Bfast i may have to try these

Probably reduced fat ricotta BUT I have to tell you, you honestly won't taste the cottage cheese at all. You won't even know that it is in there.
