Default Emeril's Veggie Soup

Alrighty this will be a picture-filled fun recipe! It's for Emeril's Alphabet Soup!

I make this soup about once a week. My roommates eat it up so fast, it's crazy. haha.

First, you have to make the "Baby Bam" for the soup's flavor. Here are the ingredients:

3 tablespoons paprika
2 tablespoons salt
2 tablespoons dried parsley
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
1/2 teaspoon celery salt


&


Mix those all together and store in an air-tight container. I already had some made so I used that.

Now, for the soup!

Ingredient list:
2 tablespoons vegetable oil
2 cups chopped yellow onion
1 1/2 cups chopped celery
1 1/2 cups sliced carrots
2 teaspoons Baby Bam, [recipe above]
2 teaspoons minced garlic
2 quarts low-sodium chicken broth
2 cups water
1/4 teaspoon ground black pepper
1 bay leaf
1 cup alphabet pasta [I prefer Orzo]


Chop up all your onions, cellery and carrots.

Measure out 2 TBSP of vegetable oil

and put into a large soup pot

Heat up the oil and add the veggies [I cut mine up ahead of time this once, because I was teaching someone how to make it, actually.]

Add 2TSP of the Baby Bam you made before to the veggies and stir.

Cook until the veggies are soft... then add the garlic [2tsp]

Measure out 6 cans of broth [or 64oz, I put extra in] and 2 cups of water.

Once you sautee the garlic in for a minute or two, slowly add the broth and water.

Add one bay leaf [I only have the shredded kind, but feel free to use the whole leaf]

Add the pepper [a few cranks or a 1/4th tsp] [action shot!]

Bring to a boil and simmer for 35 minutes.

Add the pasta [I chose Orzo] [1 CUP]

Cook for 10 minutes and you're done!

Love how you taught the recipe "Barney" style!!

I think I will try this, but I am adding zucchini...yum! I will definitely use the orzo over the alphabet pasta.

Haha, It's more fun that way!

& eek! I haven't found another veggie that compliments this soup. I did add chicken once, but I didn't like it too much.
