Default Ham And Egg Cups

HAM AND EGG CUPS

6 slices thinly shaved ham
6 eggs
1 Tbsp milk, cream, or fat-free half-and-half
1/2 tsp salt
3/4 tsp pepper
2-3 Tbsp mushrooms
1/2 c grated cheddar cheese
Vegetables of your choice

Preheat oven to 375 degrees. Spray a 6-cup muffin tin with Pam. Line each cup with shaved ham to forming a cup. In a medium sized mixing bowl, combine eggs with cream, salt and pepper until frothy. Add veggies and cheese. Stir until blended and pour an equal portion into each ham cup.

Bake for 20-25 minutes or until eggs are puffed.
