Default Crock Pot Chili Verde

Easy easy easy, and good...

1 Costco 1 lb. pork roast (they come in packages of 3--I freeze the other 2)
1 large red onion, sliced into rings
1 jar green chili salsa

low carb whole wheat flour tortillas (fajita size)
shredded monterey jack cheese
nf sour cream

Put the first three ingredients in crockpot on low--8 to 10 hours.
Shred the pork with two forks.

Wrap in tortilla, topped with cheese and sour cream.

Yum!

(I shouldn't read this section when I'm hungry....)

I tried this over the weekend, and let me just say it was so good!!! Very easy prep, and clean up too. Highly recommend this.

I used a lean, boneless pork roast so there was no fat.
