Crock Pot Chili Verde
Easy easy easy, and good...
1 Costco 1 lb. pork roast (they come in packages of 3--I freeze the other 2)
1 large red onion, sliced into rings
1 jar green chili salsa
low carb whole wheat flour tortillas (fajita size)
shredded monterey jack cheese
nf sour cream
Put the first three ingredients in crockpot on low--8 to 10 hours.
Shred the pork with two forks.
Wrap in tortilla, topped with cheese and sour cream.
Yum!
(I shouldn't read this section when I'm hungry....)

I tried this over the weekend, and let me just say it was so good!!! Very easy prep, and clean up too. Highly recommend this.

FAT....FAT.....FAT.....FAT.....FAT.....
Make sure to trim the fat, ALL the fat, or it will ruin the recipe. I found the secret to crock potting is removing fat, the meat soaks in the fat all day and turns gross real fast!!

I used a lean, boneless pork roast so there was no fat.
