Default Baked Oatmeal

I've made this several times and my family usually polishes off within the day. It's delicious and reminds me a lot of dessert....but it's healthy. Oh, btw I've also played around with this a bit and it remains good. Feel free to add in fruit to change it up a bit...granny smith apples, banana, berries...nuts, pumpkin...what ever strikes your fancy.

Baked Oatmeal

Ingredients
2 cups oatmeal
1 1/2 teaspoons baking powder
1 cup skim milk
1 whole egg, plus
1 egg white (or 1/4 cup egg substitute)
1/2 cup applesauce (I use sugarfree)
1/4 cup brown sugar (I use brown sugar substitute)
1/4 cup raisins
1/4 teaspoon cinnamon
1 teaspoon vanilla extract

Directions
1 Mix Oatmeal and baking powder.
2 Add remaining ingredients and mix well.
3 Pour in sprayed 9" pie pan or casserole dish or sprayed muffin tins.
4 Bake for 45 minutes at 350 degrees.


Nutrition Facts (without substitutions) sugars should be lower with substitutions.
