Default Pumpkin Pecan Oatmeal

Pumpkin Pecan Oatmeal

Servings: 4

1 cup quick cooking oats, uncooked
½ cup pumpkin puree, Libbys 100% pumpkin
2 tablespoons sugar substitute, Splenda
8 ounces light yogurt, vanilla
1 cup non-fat milk
½ cup powdered milk
½ teaspoon pumpkin pie spice
2 tablespoons pecans, coarsely chopped
2 cups canned pears in juice, diced

In medium saucepan, bring milk, powdered milk, and pie spice to a boil; stir in oats.

Return to a boil; reduce heat to medium.

Cook 1 minute for quick oats or until most of liquid is absorbed, stirring occasionally.

Stir in pumpkin, sugar substitute, and pears; cook 1 minute. Let stand until desired consistency.

Spoon oatmeal into four cereal bowls. Top with yogurt and pecans.

NOTES: No sugar has been added, all sugar is coming from fruit and dairy.

Per Serving: 224 Calories; 8g Fat (31.8% calories from fat ); 10g Protein; 29g Carbohydrate; 3g Dietary Fiber; 17mg Cholesterol; 105mg Sodium.

Exchanges: 1 Grain (Starch); 0 Lean Meat; ½ Vegetable; 1 Non-Fat Milk; 1½ Fat; 0 Other Carbohydrates.

Beth, I have to stop reading your awesome recipes....That pumpkin oatmeal is really something I will look forward to enjoying down the road...Read the recipe to my wife and she is most impressed. I will likely pass this on to my nutritionist too. Where is the recipe from originally?
