Guacamole Deviled Eggs
Guacamole Deviled Eggs
Ingredients:
5 hardboiled eggs, peeled and sliced length-wise
1/2 tablespoon mayonnaise
1/2 teaspoon Dijon mustard
1/2 teaspoon minced hot pepper
1 teaspoon very finely minced onion
1/2 small avocado
hot sauce
to garnish:
baby cherry tomato halves
Directions:
In a small bowl, use a fork and thoroughly mix together all ingredients. Spoon an equal amount into each of the egg halves. Top each with a baby tomato half.

Hmmm, I suppose if you tolerate bread. For me bread is still a crap shot so I think I'll just stick with making it like a deviled egg.  It's much safer!

Since I cant eat things quickly...does the guacamole turn that brown color if not eaten right away?
But it sounds awesome...do you use the yolk in the mix that gets put back into the egg? Sorry for the questions...I'm a guy that has never made eggs like this before

Hi Chris! Yes, you take the yolk out of the hard boiled eggs, mix it with all of the ingredients and then put that back into the center of the eggs. Anything with avocado will turn brown after it is exposed to air for awhile. The way to slow it down somewhat though is to wrap it up in plastic wrap. If it is in a bowl push the wrap down all the way to the guac so that there isn't an air pocket at all. Then store it in the fridge. For me, my family would polish these right off so I never have the problems of leftovers.
