Chicken Enchilada Casserole
Chicken Enchilada Casserole
1 pound boiled boneless chicken breast cut into chunks
1 package reduced fat cream cheese
1 small can diced green chiles
1 14.5 ounce can green enchilada sauce
Shredded cheese
Combine cubed chicken, cream cheese, and green chiles and spread in a 8 X 8baking dish. Pour enchilada sauce over top and sprinkle with shredded cheese. Bake at 350 until hot and cheese is bubbly.
I adapted this from the recipe for enchiladas on the back of the Old elpaso enchilada sauce can. Honestly, we don't even miss the tortillas and like it better this way. I have made it a couple of times and ate it and the pouch seems to tolerate it well too.

Have you froze this?
This sounds really good. My husband doesnt like any kind of Mexican so wondering if I would be able to freeze the portions left over. Have you nuked the leftovers? Wondered if it would be suitable to take to work.

Sorry Vicki just saw this. I think it would be fine to freeze, I have not , but I do sometime make it ahead of time and cook it the next day. It reheats in the microwave like a dream. and yes I take it to work too. Enjoy
