Default Brownies

Brownies

INGREDIENTS
1/2 cup margarine-I can't believe it's not butter FAT FREE works
1/4 cup unsweetened cocoa powder
2 eggs
1 cup granular sucrolose sweetener ( Splenda works fine in this recipe)
3/4 cup all-purpose flour
1/4 tsp baking powder
1/8 teaspoon salt
1/4 cup Fat free half and half ( or skim milk)
1/2 cup chopped walnuts (optional)


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 inch pan.
In a small saucepan over medium heat, melt margarine and cocoa together, stirring occasionally until smooth. Remove from heat and set aside to cool. In a large bowl, beat eggs until frothy. Stir in the sucrolose sweetener. Combine the flour, baking powder and salt; stir into the egg mixture then mix in the cocoa and margarine. Finally stir in the 1/4 cup of half & half (or skim milk) and if desired, the walnuts. Pour into the prepared pan.
Bake for 25 to 30 minutes in the preheated oven, until a toothpick inserted into the center, comes out clean.

Frosting: (if desired)
1 (1.4 ounce) package sugar free, chocolate fudge flavored instant pudding
1 cup skim milk

To make frosting, Mix together the sugar free chocolate pudding mix and 1 cup skim milk using an electric mixer. Mix for about two minutes or until thick. Spread over cooled brownies before cutting into squares.

How much sugar/fat total is in it, do you know? I'm still too early, but it sounds good.

I'm afraid I don't know but the only fat should be coming from the eggs and the optional walnuts. The other stuff is fat free. The sugar? Well just glancing over the recipe I would say it is pretty minimal. Everything in it is sugar free ingredients.

couldn't you use egg beaters to replace the eggs and or wheat or soy flour?

You could use the egg beaters for sure. I would think wheat or soy flour would work. I can't say I've ever baked with soy flour. I'm really not one who had ever baked much. I know that I've also seen almond flour used in baking recipes.

I made these last weekend and used the soy flour. I really just for some reason did not want to use the white flour. The soy flour I got at walmart has huge protein numbers, 16 grams per serving I think. Anyway the finished product was good. Next time I may add a little more cocoa powder for a really deep chocolatey taste, but I will definitely make them again.
