Thumbs up Diabetic Heavenly Fudge

Diabetic Heavenly Fudge

1/2 c canned crushed pineapple
1/2 c nonfat dry milk powder
2 tsp. unsweetened cocoa
2 packets sweetener

In a bowl, combine all ingredients until no traces of milk or cocoa
remain. Turn mixture into individual loaf pans or 10 oz custard cups.
Freeze until firm. Exchanges ½ milk. ½ fruit, 86 calories .3 fat

That sounds yummy. I picked up some sugar free fudge at the fair last week. I am still working on it. I picked up the maple walnut and my 3 yr. old keeps begging me for more fudge. She really liked it.

Default sugar free fudge

remember one thing about that sugar free fudge at the fair. i saw it there. no. 1 it can cause diarrhea since of the ingredient they use in lieu of sugar. secondly, remember even though it is sugar free, it's still calories. i think people think since it's sugar free it's fine to eat. it's still calories. since i'm farther out i would rather have a small quantity and have the real thing. both still equate to calories.

Default Fudge and other goodies

Hi Melanie,

I sure do agree with you! All the new low carb and carb free foods lead us to believe we can indulge, but I look at it like it's just perpetuating and encouraging "snacking on goodies" behavior. I don't know about anyone else, but that's the major reason I ended up needing this surgery in the first place! Even if it's very low sugar it's still empty calories. Over the past year and a half I've worked very hard to "get over" food. It is no longer the focus of my life, the center of all social situations, etc. I'm no longer looking for the next yummy thing I can put in my mouth. If I really want chocolate or cheesecake or whatever it is I take one bite of the real thing, really savor it and then throw the rest away. OK, I'll step down from the soapbox now!

I have eaten very little of the fudge so far. I am not much into sweets anymore. I just wanted a little and I share it with my daughter. I give her a lot of sugar free stuff.

I was diagnosed with type II diabetes so I stopped eating sugar, but after the surgery I found that I really don't even want it. Oddness I know! I tasted one bite of my daughter's new candy bar the other day and it really seemed so sweet to me. I was amazed that it didn't bring the pleasure it used to.

I think the low sugar/carb craze will affect people like the low/no fat did years ago. It is deceptive for sure. Since our surgery I know it is more imporant than ever to put foods of value into ourselves since we can eat so little anyway! There is nothing wrong with a bite of something sinfully empty though from time to time. I think as long as it is just a bite and we don't indulge too often. I do agree that the low/no carb foods are a huge help to us in managing ourselves and our intake of sugar! Those of us that have had surgery I think have an insight into it that many don't.

Wow, I love that. That's what it's really all about, behavior modification! I'm with you there. That's what I am trying to focus on. It's been difficult though.
