Ahi Crunchy Salad

Ahi Crunchy Salad
(4 Servings)
Ingredients:
Soy Vinaigrette:
1/4 cup low-sodium soy sauce
1/4 cup rice vinegar
1 Tbs. dijon mustard
2 Tbs. sugar (or sugar substitute)
1/4 tsp. pepper
1/2 yellow onion, chopped
1/4 cup olive oil
1/4 cup sesame oil
Asian Slaw:
3 cups cilantro, chopped
1 1/2 cups green cabbage, shredded
1 1/2 cups red cabbage, shredded
1 cup julienned carrots
1 1/4 cup bean sprouts
1 cup broccoli slaw, store bought
Remaining Ingredients:
1 lb. fresh ahi tuna
2 tsp. Cajun seasoning
2 tsp. olive oil
6 cups baby lettuce greens
1 cup radish sprouts
1 tsp. sesame seeds
Directions:
To prepare the Soy Vinaigrette: Combine all ingredients except oils into blender. Blend while slowly adding oils to emulsify the dressing.
To prepare the Asian Slaw: In a large bowl, combine the Asian Slaw ingredients and toss until thoroughly combined.
Coat ahi with Cajun seasoning. Heat oil in cast iron pan to almost smoking point. Place ahi in pan and allow blackening on all sides. Remove from pan and cut into slices.
Add baby greens to Asian Slaw and toss with ˝ cup Soy Vinaigrette. Mound lettuce mix into 4 bowls creating as much height as possible.
Top with radish sprouts and arrange ahi on top of each salad.
Drizzle another 1 Tbs. Soy Vinaigrette per bowl over the ahi and salads. Reserve the remaining Vinaigrette for another use. Finish the salads by garnishing with sesame seeds.
Note: Yard House recommends adding fried wonton strips (not included in analysis) to add crunch to the salad.
