This sounds good Mike. I used to make something similar when I was doing Weight Watchers, except I used to have huge cravings for Mexican food, so I turned it into a taco pizza. I used the pita bread base, and spread some fat free refried beans on it (pre-warmed in the microwave), then spread on 2 or 3 tablespoons of mild salsa, and sprinkled on some fat free or reduced fat cheddar cheese. Pop it in the oven on a cookie sheet at 400 until the cheese starts to bubble. When it comes out, you can add additional toppings if you like, such as shredded lettuce, diced tomato, sour cream, etc.

Bought myself some 100% whole wheat pitas just for this purpose! I baked the pitas to make a crispy crust...was afraid my pouch wouldn't like the softer version (it hates toast! but likes saltines...go figure!). I plan on having one tomorrow after work. And now that Sherry mentioned a taco pizza I have another idea to look forward to also! Thanks all!!!

Totally bumping this thread....I made this the other night..it was SOOOO good


I used roasted red and yellow bell peppers, cut very very small with diced banana peppers.

I'm going to try the taco version and try one with ground turkey, I dont tolerate ground beef very well

I'm trying to come up with a breakfast version but cant come up with a "sauce"

What about cream cheese, turkey sausage, and RoTel diced tomatoes with jalapenos? I'm making that as a hot dip lately, but I bet it would be great on those pitas, perhaps with a little melted mozza on top?

oh that would be SO good I love roTel tomatoes...I love it as roTel cheese dip....

I have to try this. Too bad I've already had my toddler meal for the night LOL
