I just made this with the canned crab instead of the tuna---OMG it was SOOOOO good!

If I do it again with the crab, I'm going to delete the garlic powder and try Celery powder and a couple of dashes of Old Bay.

Yum, yum, yum!

Beth...this is by far the best recipe you've posted--it's versatile and restaurant level delicious!

hehehe...I have to admit I'm having fun watching your excitement, Mike. Question were you always a cook or is this a new found thing?

I just ate these for lunch myself and I still enjoy them. I'll have to try it with crab. Sounds really good to me. Thanks for the suggestion.

They aren't nearly as dense as beef or chicken, but I'm not sure it would qualify as a soft food yet. Maybe give it a couple of more weeks. I promise, it will be WELL worth the wait!

Ok I couldnt resist, I just made them and Holy Cow are they good. I just chew the hell out of them. I forgot to put the garlic and onion powder in but they still tasted good. I didnt have the flax, so I took some garlic and butter croutons and crushed them up really well and that worked too.

Hehehe...guess we got ourselves another convert!! I eat these 2 or 3 times a week. They are so quick and easy. I tried them the other day with crab and liked those too but I think I prefer the tuna to the crab. I also put a little ff shredded mozzerella in when I last made them and that was really good too and it increased the protein a bit more!

Default Variation

Well I did a variation of these for lunch and they were wonderful! I don't have the stats but they will change a bit...but anyway, this is what I did:

1 6oz can light tuna (in water)
1 T reduced fat mayo
2 T reduced fat grated parmesan cheese
2 T ground flax seed
Onion powder to taste
2 minced garlic cloves (I used the kind in the jar)
2 tsp prepared horseradish
1/4 c reduced fat ricotta cheese
1/4 c garden vegetable egg beaters
1-2 tsp southwest seasonings

Mix all ingredients together. Heat 1Tbsp EVOO in frying pan. Place 1/4 c of mixture into pan and flatten out into a patty shape while in the pan. Brown both sides.

4 servings

This was delicious!! I think next time I may try leaving out the mayo and add a little hot sauce into it instead.

We had these last night, but I did it with crab meat, old bay, and I used the Flax Meal this time instead of crushed crackers. They came out perfectly again! I'm thinking of trying salmon, without the old bay, but with a little lemon pepper maybe?

I like your new variation--we'll try that!

This is such a great recipe. In fact, if Tooley is still planning on doing a cookbook for us, it should be called "Parmesan Tuna Patties And Some Other Stuff." We've been eating these like twice a week!
