I haven't made this particular recipe yet, but I have substituted it in other recipes. It really doesn't change the consistency, but it does change the taste in some recipes...because the fat free mayo has more sugar in it and is sweeter than the reduced fat and regular kind.

Well I'm glad so many of you are enjoying these. They are still a favorite of mine for sure along with a couple of my girls. Every time I make them I usually only get 2 of the 4 and someone else claims the other 2.

Yummy!
I loved these! I made a couple of ingredient modifications because I didn't want to go to the store yesterday evening, but they were delicious. They were a bit dry, perhaps I overcooked them but I wanted them brown on the outside. I wonder if there would be a good dipping sauce for them? Maybe even tartar?

Glad you liked them, CiCi. I don't find mine dry at all but I do brown them in a little Olive Oil or maybe it was the ingredient changes you made. I would suspect that if you went with crackers vs the flaxseed meal they would be a little drier. I use flaxseed and then grind it myself.
For a sauce I've used a little Marinara sauce and melted a little reduced fat Mozzarella on them. They are delicious this way.

I haven't made these yet, but my mom used to make something very similar out of canned mackeral or canned salmon. I always liked a little bit of mustard on them.
