I was just printing off the recipes I've collected and was going to make the tuna patties tonight. Can't wait to try them. I saw the nurse practitioner on Thursday and can now eat fish, chicken in water, and some ground beef; it's so nice to have a regular meal though I can't eat much - but that's good

Hope you like them, Coreyn. They won't pat into a patty like a hamburger. They will be pretty moist so they won't hold a patty form until they are cooked. It will work though, promise. I just take 1/4 c and dump it into a frying pan with a little olive oil. I then take the spoon and kind of form it into a patty shape. Once it is done on one side turn it. It really does hold its shape without much problems. I was surprised.

BETH!

These were AWESOME! I LOVED them! They tasted like they were made in a restaurant!

I used the egg substitute, and please don't think I'm an idiot, but I have no idea what flaxmeal is. So, I used about 12 crushed whole wheat Wheat Thins and dumped those in. It worked perfectly and I included a picture of my "Milady Masterpiece!"

Mmmmm. Mmmmmmm. Mmmmmmmmmmmmm!!!!!

Thanks!

-Mike

PS. I'm not sure if I used enough exclamation marks...sorry I was so stingy with them!!!!parmesan-tuna-patties-dsc06112.jpg

hehehe....well we wouldn't want to be upsetting miss trina. So it was a good thing you were a wee bit stingy.

Flaxmeal is just ground up flaxseed, Mike. I buy the flaxseed and just grind some up in my Magic Bullet. It has omega-3 fats in it which are good for your heart. It has a wee bit of a nutty flavor and I like the flavor it gives these.

So glad you liked them, Mike. Looks like you did an awesome job making them. I like that they reheat really well. I'll make like 4 of them and eat 2, stick the other 2 in the fridge for the next day. Just pop them in the microwave for a couple of minutes and they taste as good as the day before.

Where do you buy the flaxseed Beth?

Mike, your picture of these looks scrumptious! I think I mentioned before that my mom used to make something similar to this when I was a kid, but she used canned mackeral or salmon, and she lightly coated them with a mixture of flour & cornmeal before pan frying them. It was always one of my favorite meals as a kid, and I would use the squeeze mustard bottle to draw designs on them before eating them, lol.

I definitely need to make these soon.

Sherry, I just find it at my local grocery store. The store I shop at keeps it by the flour, cornmeal, etc. I have also seen it though by things like the wheat germ, etc.

You know Sherry I'm sure canned salmon would work just as well as the tuna too and you can still use that mustard for your favorite designs!

Has anyone who tried this recipe used fat free mayo instead of reduced fat? That is what I have and was just curious how they turned out.

Thanks

Default Fish Face

I plan on making these tonight! I've been addicted to Subway's tuna sandwich (I eat the insides and can't eat but a couple of bites of the bread) and this new tuna recipe will be a great change of pace!

Mike, your picture sold me! I don't have an flaxseed at home right now so I'll be crushing some crackers too!

Thanks for posting the recipe, Beth. After hearing such praise about them, I wanted to make them but didn't know how. Guess what we're having for dinner tonight! And we're going to try our favorite on the patties--malt vinegar!!

Tuna in just about any form is my favorite fish, even in tuna steaks on the grill. I'm glad we live so close to fresh fish--I used to hate fish, but I'm gradually broadening my scope of it. As my tastes have changed, good stuff tastes the best.
