Default Looking for Chili recipe

I am the co chair of the social committee and in March we are planning a chili cook off. We have 3 judges and I would like to enter, problem is I don't have any good chili recipes. I will be competing against some people who have taken first place in other contests.

I am asking for anyone who has chili recipes to send them my way.

I've made this quite often; it freezes pretty well too. (This is a big batch, but is easily halved.) I've brought it into work and it has been very well received.

You will need:
2 lbs of 90% lean ground beef or ground turkey (or a combination of both)
1 large onion, minced
8 cloves of garlic, minced

Spray a 4 qt pot with Pam or a bit of olive oil. Saute onions until tender, add meat and garlic, cook until the ground beef/turkey is cooked through.

Now add :
1 large can of "crushed" or "kitchen ready" tomatoes
2 cans of diced tomatoes with juice (I like to used the seasoned ones available- experiment!)
1 small can of tomato paste
2 cans of black beans, rinsed in cold water (I prefer Bush's, they're not so mushy)
2 small cans mild diced chili peppers
1/2 tsp cayenne (more if you're brave)
1 Tbs Frank's Hot Sauce
1 tsp oregano
3/4 tsp ground cumin
2 tsp chili powder
Now, the secret ingredient: 1/4 cup unsweetened cocoa powder (Hershey's)

Simmer on low for 2 hours, stirring with a wooden or bamboo spoon so as to not mash the beans.

I have an awesome one that is full of beans of all sorts, if that would work (not so traditional chilli) but is is really, really tasty, let me know if something like that would work and I will dig out the recipe!

I got this from Duckie and it's awesome!!!!!!!!!!!


Here is the "Top Secret REcipes" version of Wendy's Chili. It's delicious.

I used a can of peeled tomatoes and canned chili peppers instead of fresh ones.

2 lbs. ground beef
one 29 oz. can tomato sauce
one 29 oz. can kidney beans (WITH liquid)
one 29 oz. can pinto beans (WITH liquid)
one cup diced onion (1 medium onion)
1/2 cup diced celery (1 stalk)
3 medium tomatoes, chopped
2 diced chili peppers (i forgot this when I typed it in. lol)
2 teaspoons cumin powder
3 tablespoons chili powder
1 1/2 teaspoons black pepper
2 teaspoons salt
2 cups water

1. Brown the ground beef in a skillet over medium heat; drain off the fat.

2. Using a fork, crumble the cooked beef into pea-sized pieces.

3. In a large pot, combine the beef plus all the remaining ingredients, and
bring to a simmer over low heat. Cook, stirring every 15 minutes, for 2 to 3
hours.
(I just cooked it in a crock pot over several hours.)

Makes about 12 servings.

Tidbits: For spicier chilli, ad 1/2 teaspoon more black pepper. For much
spicier chli, add 1/2 teaspoon back pepper and a tablespoon of cayenne pepper. And for a real stomach stinger, add 5 or 6 sliced jalapeno peppers to the pot.)

Leftovers can be frozen for several months.

My "secret" ingredient is....brown sugar! Of course, that was before gastric-bypass surgery. But my family LOVES my chili beans!

Let us know what happens in the "Chili Cook-off"...okay

Katzz87 you could use brown sugar splenda as your NEW secret ingredient. I have used it a few times and it works well in the place of sugar.
