TT Nachos
Trader Joe's Soy & Flaxseed Vegetable Tortilla Chips
1 Can Organic Pinto Beans
1 cup Pico de Gallo (chopped onions, tomatoes, jalapenos, cilantro)
1 Tbsp. McCormick Taco Seasoning
Fat Free/Reduced Fat Cheddar Cheese
Additional Optional Toppings:
Shredded Lettuce
Lean Chicken cut small
FF Sour Cream
Beans:
1. Add pintos with juice into a small pot.
2. Combine with pico de gallo and taco seasoning
3. Stir and let simmer for 15-30 minutes (until it looks like refried beans)
Assembling:
4. Place the tortilla chips on a plate (3-4 if just for a TT person)
5. Sprinkle globbies of beans over the chips.
6. Put a small amount of shredded cheese on top.
7. Microwave for 30 seconds.
8. Put additional cold toppings on if desired.
This recipe is pretty low in fat, but really high in fiber and protein. I've never dumped with it, and I wish you all the best of luck as well. =0)
